Year 11 and 12 food students were extremely fortunate to take part in a masterclass demonstration presented by Luke Matthews, Executive Head Chef at Chewton Glen, on Friday 23 November. Students were shown how to correctly portion a whole chicken, fillet flat and round fish as well as tips for professionally plating up a dish. They also had the opportunity to taste the food cooked, which involved some unusual ingredients including squid, octopus and white anchovy. They all agreed it was delicious! Students will be able to demonstrate some of these skills within their practical exams this year.
